The Cabernet Franc has a concentrated and inviting fruit forward nose, with aromas of tart cranberry and dark cherry as well as subtle herbal notes. The palate has a pleasing and balanced acidity with darker fruit than the nose, followed by hints of cedar, baking spices and milk chocolate and smooth tannins on the finish.
Winemaker Notes
The grapes are crushed gently and dropped into 1.5-ton bins and cold soaked for 24 to 72 hours. They are then inoculated with a variety of yeasts, hand punched and pressed directly to the barrel where the wine finishes both primary and secondary fermentations. The individual lots of wine that comprise the Cabernet Franc are kept separate for at least one year before hand.
